    Polenta fries - Gluten free, healthy Italian Street-food

    You feel like a guilty pleasure eating French fries, but the little voice in you tells you that it's not reasonable. Well I have the solution for you.
    I propose you to make polenta fries!
    It's simpler than you think.

    Why are you talking about corn porridge? Polenta is nowadays known mainly on the basis of corn flour, but the Romans already consumed this dish made of boiled barley flour. But today there is no porridge for you, no. You will make it in the shape of a French fry.
    By the way, it wasn't my idea, eh… no, the Italians have been eating it for a long time.

    In fact, in Bari, people prepare and eat sgagliozze in the street during St. Nicholas' Day and other popular festivals. And this superb example of street food is passed on from generation to generation, despite the prohibitions against eating it in the street.

    I wanted them healthy and low fat!

    Here we go. So today to replace the fries you dream of, I'm going to propose to make them in the oven to avoid too much fat. And contrary to the traditional Sgagliozze, you're going to cut them into sticks, a centimeter apart, to remind the shape of our old French fries or more exactly the Pont Neuf apple.
    And in addition to making them less greasy, the use of cornflour will also reduce the gluten.

    You are lucky because you can personalize your polenta with herbs; thyme, rosemary, basil, etc…; Parmigiano-Regianno, Pecorino Romano, diced candied tomatoes, olives, truffle oil… basically whatever you want at the time. See you can mix it all to make you even more happy. But don't tell the Nonas, they might not appreciate your creativity!

    What do I eat them with?

    Well, besides the prime rib or chicken nuggets, you can serve them as :

    • an aperitif,
    • with fish and chips,
    • neapolitan ragù,
    • with a good salad, tomato and mozzarella di buffala

    Polenta fries

    You want to eat a French fry without potatoes and without an oil bath. I have exactly what you need. Polenta fries, e basta!

    You can also fry it without any problem, so don't waste another second, go ahead and put on your apron.

    Ingredients

    Scale
    • 80 g of polenta
    • 180 g of water
    • 180 g of milk
    • salt
    • thyme

    Instructions

    1. Heat the water and milk and infuse the thyme.
    2. When boiling, pour in rain the polenta.
    3. Reduce the heat and let it swell for 7 minutes.
    4. Remove the polenta on a sheet of baking paper, taking care to form a rectangle 1 cm thick.
    5. Allow to cool, then cut into French fries.
    6. In your oven, first heat to 195°C, brown the fries for 10 minutes.

    Notes

    You can add :

    -Rosemary,
    -Thyme,
    -parmigianno regiano,
    -pecorino romano,
    -etc...

     

    You can also give them the shape of a paving stone and garnish them with candied tomatoes or pepperoni.
