This recipe will allow you to make the perfect grilled cheese! The one, THE only one you'll ever want to eat.
My relationship with this sandwich got off to a bad start. It goes back to the time when I was living in Montreal. One of the dishwashers who worked at the restaurant, asked me to cook a grilled cheese for him as a snack. And although I had heard of it before, I had never made it. And so what had to happen, happened: I cooked a burned cheese. A real humiliation for me, so much so that for years I simply refused to make it. Until 2014....

My revelation
That year, the film "Chef" by Jon Favreau was released. Obviously, a movie about cooking, street food and food trucks speak to me. So, I devoured it. And in this movie, Jon happens to make a killer grilled cheese! And there, no choice, I have to try to reproduce it. What I do quickly. And then: REVELATION!
In the mouth it is a pure marvel, it is crispy and soft, sweet, and slightly salty. A real simple happiness. Street food in a state of art!
I can feel it, you can't wait to learn its secrets!
Which cheeses to use?
In the film, four cheeses are used:
- yellow cheddar
- white cheddar
- Gruyere cheese
- Parmesan cheese
You put them in layers and let them melt on buttered sourdough bread over low heat.
Personally, I use the following cheeses:
- matured cheddar
- smoked cheddar
- Comté cheese
- Parmesan cheese
But you can make it with the cheeses of the Savoyard fondue:
- comté cheese
- beaufort
- Gruyère of Savoy
or any other cheese you like.

How to make it golden brown?
You need to butter the bread slices with a soft butter. I use ½ salt butter to do this, but soft butter can be used instead.
Then I put my slices of bread buttered side down in a frying pan previously heated to low heat, I add the cheese and I regularly check the color of the bread.
What to serve with?
A glass of wine or an amber beer, to be consumed in moderation of course. And a salad of young leaves, to which you add a finely chopped shallot and some walnut kernels. The whole thing is spiced up with a walnut oil and balsamic vinegar dressing.

Ingredients
- 8 slices sourdough bread
- 4 slices matured cheddar cheese
- 4 slices smoked cheddar
- 4 slices of comté cheese
- 60 g Parmesan shavings
- 40 g butter ½ salt
Instructions
- Butter the bread slices with soft butter on one side only
- Heat the pan over low heat
- Add the bread slices on the buttered side and place the cheese slices on top
- Check the color and after adding a second slice of bread on top, turn the grilled cheese over.
- Your grilled cheese should be golden brown on the outside and the cheese should be melting inside.
